  • Stir together sour cream, parsley, vinegar, sugar, and chives.
  • Gently fold in cucumbers.
  • Cover and chill.

  1. We are always looking for good cucumber salads and this was was great. I used parsley and chives out of my herb garden and it was great. Next time I will add some onions, I missed them with my cucumbers. Made for ZWT6
     
  2. Awesome! I usually always make cucumber salads with dill, but I loved this version with the fresh parsley, chives and tarragon vinegar. The longer it chills, the better it gets. Thanx for sharing!
     
  3. I made a half recipe of these cukes (as written) for 2 of us. While we liked them, we did find them a bit bland. Salt & pepper + the chill time improved them further, but I think maybe more sugar to better balance the tartness of the sour cream & vinegar may be the answer - for us at least. That is what it often comes down to - matters of pers pref. I may well revisit this recipe after ZWT is over to see if I am right. Thx for sharing this recipe w/us.
     
  4. Delicious and so super easy! My DD and DH loved this and asked for more! I added a little fresh tarragon on top, simply because I had it. Made for ZWT 6 :)
     
  5. I forget how much I like cucumbers until I stumble upon a recipe such as this. Takes a ho-hum cucumber and really dresses it up. I didn't have parsley so used extra chives. Creamy good! Made for ZWT 6 by a fellow Unruly Under the Influence!
