Scandinavian Cucumber Salad Recipe

A quick and easy salad recipe that is perfect for the summer. Great with BBQ food! The Tarragon wine vinegar really gives this a wonderful flavor. It should chill for at least 2 hours before serving. Recipe adapted from Scandinavian Spice Company for the Zaar World Tour II.

I did have regular cucmbers so I used pickles. I also didn't have sour cream so I used white gravy because it was similar in color. I have no idea what tarragon vinegar so I just used apple cider vinegar and added hamburger seasoning for an herb taste. Honey was a great subistitue for sugar. 10 out of 10 would make again.

  1. Thinly slice unpeeled cucumbers - use can use a mandolin or slicer for nice paper thin slices. Should be about 3 cups.
  2. Whisk sour cream, parsley, vinegar, sugar, and chives in a small bowl.
  3. Fold in sliced cucumbers.
  4. Cover and chill for at least two hours.
