Scandinavian Almond Cake

"I got this recipe when I bought a cool looking pan. It's meant to go in there, but would work just as well in a loaf pan. This cake is very almondy and moist!"

  • Preheat oven to 350.
  • Spray pan with cooking spray/Pam and flour.
  • Beat sugar, egg, extract, and milk well. Add flour and baking powder. Add butter.
  • Bake for 40-50 minutes. Edges must be golden brown.
  • Cool in pan overnight before removing. Cake will break if removed too soon.
  • Sprinkle with icing sugar.

  1. I let the cake set but still breaks up when I try to remove it from pan
     
  2. Can a person use Almond milk instead of milk? I have a grandson with an allergy?
     
  3. Every time I make this cake in the traditional pan, it sticks. The recipe that came with my pan said to use margarine, but I’ve used butter. Do you think it makes a difference? Also, any tips for getting it out easily?

  5. What size pan do you use to bake this cake? Also, the picture reveals almond slices inside the cake near the top of it. I don't see anything about this in the recipe. Can you enlighten me as to how that is accomplished?

  3. This almond cake is delicious & so easy to make. I used a 9 x 5 loaf pan - worked great!!!
     
  4. Turned out great! I let it cool for a couple hours - not overnight- and it came out easily. I also put a blanched almond in every indentation in the bottom of my pan. On another site with the identical recipe, they mentioned that you can use a loaf pan if you don't have the scandinavian kind!
