  • Preheat oven to 350.
  • Mix sliced vegetables.
  • Mix melted butter with sugar, salt, oregano, and pepper.
  • Mix butter with veggies.
  • Spread in pan.
  • Bake ½ hour; remove from oven; spread Parmesan over top; bake ½ hour more.

  1. Any sort of tomato works well. I prefer red or sweet onions and double the recipe to avoid fights.

  5. This was very tasty. I used grape tomatoes, and a sweet onion. I also added some garlic and a bit of basil. I used just a dab of fat free margarine, and Splenda in place of the sugar. The sweetness really makes this dish, don't leave it out! Thanks for posting this delish veggie dish.

I am a retired English professor and librarian. For forty years I ate on the run, working and rearing a very large family. Now I have time, and I am rediscovering cooking (and eating!).
