This is a great way to use fresh tomatoes. We love this as a side dish. It is very easy to make with just a few ingredients.
- 5 medium fresh tomatoes
- 1 tablespoon butter
- 1 1⁄2 cups of texas toast garlic butter croutons
- 1⁄2 cup parmesan cheese
- 1 teaspoon italian seasoning
- 1⁄8 teaspoon garlic powder or 1 garlic clove, minced
- 1⁄2 cup cheddar cheese
- Grease the bottom of an 8x8 glass baking dish with butter. Cube tomatoes and toss with bread crumbs, seasoning, and then top with cheese. Bake at 375.
This is such a great way to enjoy fresh homegrown tomatoes. I added a teeny bit of sugar but otherwise stuck to the recipe. It was a just the right balance of sweet, savory and cheesy. Thanx for sharing!
