Scalloped Potatoes with Herbed Cheese

I clipped this recipe from our local newspaper quite some time ago and I have been making it ever since. It goes great with Baked Ham but try it with any other meat that strikes your fancy.

  1. Preheat oven to 350F degrees.
  2. Butter 9-inch casserole dish.
  3. In medium saucepan, melt butter.
  4. Whisk in flour.
  5. Cook 2 or 3 minutes at medium heat without browning, stirring constantly.
  6. Gradually whisk in milk.
  7. Bring to a boil.
  8. Reduce heat.
  9. Simmer gently 5 minutes.
  10. Add cream cheese, swiss cheese, salt, pepper and nutmeg.
  11. Stir until cheese melts.
  12. Layer potatoes and butter sauce alternately in buttered dish, ending with sauce.
  13. Sprinkle with Parmesan.
  14. Bake 1 hour and 20 minutes or until potatoes are tender.
  15. Let stand 5 to 10 minutes before serving.

I prepared these for an Easter dinner I was attending (and sacrificed a piece of my finger slicing the potatoes on a mandolin!)and really liked the look of the recipe. However, I was surprised to find the taste pretty bland for my taste. I also added a thinly sliced onion with the layers of sauce and potatoes and even that didn't add much zip. Thanks for posting, however.

These potatoes were fantastic. I didn't have herbed cream cheese so I just used regular. It still turned out great. I will be making this one again. Thanks bert.
