  • Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper.
  • Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.
  • Return to heat; cook until thickened and bubbly.
  • Fold in ham, onion, green pepper and cheese. Pour over potatoes in a large bowl.
  • Stir gently then move into a buttered 13X9-inch baking dish; cover with foil.
  • Bake at 350 degrees for 30 minutes.
  • Uncover and continue to bake for 1 hour.
  • Let stand for 10 minutes before serving.

  1. Excellent scalloped potato recipe. I used only 1/4 lb ham and think the recipe would not suffer one bit with out any ham at all. I am preparing the dish for the second time.
     
  2. Wonderful, and easy to make! I also added cheese on top for the last 15 min -- turned out great!
     
  3. I doubled this recipe for Christmas dinner 2000 and everyone came back for 2nd's and some even for 3rd's. Very easy to make. I increased the cooking time to 60 min's and put a extra cheese on top for the last 15 min. uncovered for a nice crust of baked cheese.

Tweaks

  1. Dice the ham. 1/8 to 1/4 in cubes. Any pepper will do - try red bell or jalapeno. Layer the potatoes on the bottom and then add the sauce, repeat at least once more. Top it off after the first 30 min with cheddar and sprinkle liberally with paprika.
     
  2. I left out the green pepper and salt then added garlic pepper felt the ham had the salt needed
     
  3. My grandma makes the best casseroles and comfort foods ever. I couldn't get her to answer the phone the other night to get her recipe so I ended up tweaking this one enough on my own to make it taste just like hers. All I had to do is replace the green peppers with celery and a 10.5 oz can of cream of celery. Right before adding the ham, onions, celery and cheese to the recipe, I added the cream of celery to the base cream. I also added a lot more salt and pepper to the mixture before putting it in the oven.
     
  4. Made this a bit richer by adding some whipping cream and reduced stock to the white sauce. And added some Parmesan to the Cheddar. Also, I tsp of Vietnamese crab sauce for umami and a small jolt of Tabasco for oomph. Used Aldi uncured ham -- the BEST.
     
  5. I made this it's my favorite meal I don't add the green pepper or onion. I use extra ham and extra rue more pepper. When it's done I shut the oven off and put cheese on top and let it melt back in the oven.
