Scalloped Potatoes and Ham

My mom's recipe: this is a warm, cheesy, comforting dish that fills the house with the most delicious smells. It's a favorite from my childhood.

My whole family loves this dish. They beg me to make it for them, and I do because it is delicious and healthy. The wheat flour in the roux gives it such good flavor. Try it, you'll love it too!

  1. preheat oven to 350 degrees.
  2. melt butter in large pot (I use 8qt. size) over low heat.
  3. blend in flour, salt, pepper.
  4. cook until browned, stirring constantly.
  5. add milk slowly, stirring constantly, 1 minute.
  6. cook until thick and bubbling, stirring constantly.
  7. remove from heat.
  8. fold in ham, onion, green pepper, potatoes and cheese.
  9. pour into buttered 13x9x2 casserole dish.
  10. place on foil covered tray to prevent spills.
  11. bake for 30 minutes covered with foil.
  12. uncover and bake for 1 hour or until browned and bubbling.
  13. remove from heat and let stand for 10 minutes before serving.
