We were served this at a friend's house when I was a teen and I've been making it ever since.
- 1⁄2 cup melted butter
- 1 cup sugar
- 1⁄2 cup milk
- 4 cups soft breadcrumbs
- 3 beaten eggs
- 1 (28 ounce) can crushed pineapple, undrained
- Mix first four ingredients.
- Add the eggs and pineapple, stir until blended.
- Bake in a casserole dish at 375°F for 45 minutes, until golden brown.
I'm sorry to say that we did not care for this dish at all and I won't be keeping this recipe. It was mostly breadcrumbs and you could barely taste that there was any pineapple in it. It was definitely not what I was hoping for. Years ago I had a scalloped pineapple recipe that we just loved but I can no longer find my recipe - but this recipe was definitely not like it.
I made this for a Christmas pot luck last year, made it a couple more times throughout 2005, and took it to the pot luck again. Everyone loves it, and I was kinda surprised at how good it is because I'm not much on bread puddings. This great--almost like cobbler. I added a little lemon juice to give it some tang. Thanks for posting. It's a great side dish.
I love this dish!! I could easily eat the whole thing and skip the rest of the meal. Was looking for a side dish for a potluck meal next week and hadn't thought of this one, I think I'll make it. Thanks Windchime!
