      In a large wok or nonstick frying pan, heat oil over medium-high heat. Add garlic and ginger and cook, stirring, until fragrant, about 30 seconds.

      Add scallops and stir to coat with garlic mixture, then cook 1 minute. Mix in snow peas and cook 1 minute.

      Stir in broth and soy sauce and cook just until simmering. Sprinkle with green onions and mix with noodles.

      I used a garlic press to mince the garlic and between that and grating the fresh ginger root by hand, the prep was a bit labor-intensive. However, it was all worth the effort because this was delicious! We will definitely be adding this to our regular recipe rotation. I thought it would be good with some additional vegetables such as broccoli, but my husband liked the simplicity of it just having the scallops and snow peas so you could focus on all the flavors.

      I bought rice noodles since we don't eat wheat. If I can find the dried egg, I'd like to try it with that as well.

      The large amount of ginger gave it a spicy flavor without having to use spicy peppers or other items which are not recommended on my current diet. It also gave a refreshing and healthy feeling afterwards.

      We bought wild fresh-caught scallops, and the quality of the fish was very good which contributed to the quality of the dish.

      I wasn't entirely pleased with the full combination, but the noodles and sauce were nice on their own. They might work well as a base for something else.
