Posted for RecipeZaar World Tour 2006, this is a recipe adapted from the small community cookbook from Dixon House on the West Coast, South Island of New Zealand, now sadly out of print. Serving size and prep. time are guestimates.
This brings out so much flavor for plain fish. I used regular basil. I omitted the salt. I used a mix of cheddar cheese and provolone cheese. It gave a great taste to the fish. I used dried parsley as I didn't have fresh. Thanks Kiwidutch :) Made for PRMR tag game

Absolutely delicious! I don't usually care much for fish but I just loved this. I used cheddar/jack cheese. The 30 minute cook time was perfect - the fish was light and the topping was outstanding. Such a simple to make yet delicious fish - thanks for sharing your recipe!

This was very good. I'm always looking for new ways to make tilapia and this was a winner. I did rub the fish with a bit of lemon juice before I covered it with the mixture. I also put it under the broiler the last 10 minutes for some added crispiness. Yum!
