• 1 1⁄8 kg chicken
• 6 tablespoons soy sauce
• 6 tablespoons honey
• 6 tablespoons lemon juice
• 1 tablespoon oil

directions

1. Make two cuts in the fleshy part of the meat. Mix the soy sauce, honey and lemon juice in a non-metallic dish. Add the drumsticks and turn them in the marinade. Cover and chill for 1-3 hours, turning the drumsticks in the marinade occasionally.
2. Preheat the oven to 190C/170C/Gas 5. Grease a large roasting tin with oil. Lift the drumsticks out of the marinade and put into the tin a single layer. Cook in the oven for 25-30 minutes, brushing them with more marinade halfway through.
3. Leave to cool, then chill until ready to pack.
