Savoury Cheddar Pie

This pie will fill your house with the most delicious savoury fragrance. It's a family favourite of one of my co-workers.

We are big fans of this recipe. It is very quick to throw together, the aroma is fantastic, and it makes a tasty, filling meal. The only quibble I have is that the hash browns don't really form a crust; really, this is more of a potato/cheese casserole than a pie. Next time I may prebake the potatoes, maybe even under the broiler, so that they crisp up a bit or form a crust. Still, this was a good, flavorful recipe. Thanks!

  1. Grease a 9-inch glass pie plate.
  2. Combine potatoes with all but 1/8 cup of onions and press the mixture into pie plate to form a crust.
  3. Sprinkle crust with pepper, Romano cheese and garlic powder, then dot with spinach and feta cheese.
  4. Top evenly with cheddar cheese.
  5. Whisk together eggs and milk and pour over pie, working from edge to middle.
  6. Position reserved chopped onion on top of cheddar cheese in center of pie; sprinkle parsley flakes in a ring around the onion, then sprinkle paprika around parsley to make an outside ring.
  7. Bake at 325°F until lightly browned, approximately 1 hour and be prepared for everyone to ask,"What smells so good?
  8. "Cool, cut into six slices, then microwave 6 to 7 minutes.
  9. Serve with a tasty mild salsa.
