Ingredients Nutrition

  • 12 lb assorted cut-up vegetables (such as red peppers, zucchini, yellow squash, carrots, celery, mushrooms, etc.)
  • 1 envelope Lipton Onion Soup Mix
  • 2 tablespoons extra virgin olive oil

Directions

  1. Preheat oven to 450F degrees.
  2. In a plastic bowl toss all ingredients until coated.
  3. Empty into a 9x13 roasting pan.
  4. Bake, stirring once, for 20 minutes or until tender.
