A tasty and easy way to serve garden vegetables.
- 1⁄2 lb assorted cut-up vegetables (such as red peppers, zucchini, yellow squash, carrots, celery, mushrooms, etc.)
- 1 envelope Lipton Onion Soup Mix
- 2 tablespoons extra virgin olive oil
- Preheat oven to 450F degrees.
- In a plastic bowl toss all ingredients until coated.
- Empty into a 9x13 roasting pan.
- Bake, stirring once, for 20 minutes or until tender.
