Savory Tomato Jam

"Makes a wonderful foil for spicy hot dishes. Sere it on pita crisps or on store-bought onion or caraway crisps. Delectible alongside Merguez Bites.   • Combine the tomatoes, sugar and honey in a saucepan. Cook, uncovered, oer low heat, stirring occasionally, until thick and jamlike, about 1.5 hours, depending on how watery the tomatoes are. If necessary, raise the heat toward the end of the cooking time to speed up the process. Add a pinch of salt to accentuate the sweetness, and allow the jam to cool to room temperature.
  • To serve, spread the tomatoes on a small oal plate, flattening them slightly with the back of a spoon. Serve at room temperature.
