- 2 tomatoes, large (sliced)
- 3⁄4 teaspoon salt (divided)
- 3⁄4 teaspoon pepper (divided)
- 1⁄4 cup pecan pieces, toasted (toasted pine nuts work equally well)
- 1⁄4 cup Italian seasoned breadcrumbs
- 2 tablespoons margarine (melted)
- 3 (8 ounce) packages cream cheese (softened)
- 1 (15 ounce) container ricotta cheese
- 1 (8 ounce) feta cheese (crumbled)
- 3 eggs
- 4 cups spinach (loosely packed & shredded)
- 2 teaspoons garlic powder
- 2 tablespoons flour
- 1 tablespoon dill (fresh and chopped)
directions
- Sprinkle tomato slices with 1/4 tsp each of salt and pepper.
- Drain on paper towel 10 minutes.
- Process nuts untill ground and stir into bread crumbs and butter.
- Press into bottom of 9in spring form pan.
- Bake at 350 for 10 minute Cool on wire rack.
- Beat cream cheese on medium speed until creamy. Add other cheeses and eggs, beating until blended.
- Stir in the rest of the ingredients and rest of salt and pepper.
- Pour into crust.
- Bake at 350 for 15 min.
- Top with tomatoes and bake 30 minute more or until set.
- Turn oven off and leave cake in for 20 min.
- Cool on wire rack 10 min then run knife around edge and cool for 10 minute more.

Hello, I live in the River Valley in Northwest, AR. I have lived here my whole life. I would love to travel more, but I get so terribly motion sick it almost isn't worth it. If I could live anywhere in the U.S. it would be North Carolina. Outside the U.S. would be Australia. They have the greatest accents and seem like such friendly people. I am a stay at home mom. I have 2 wonderful and picky daughters age 10 and 8. They are the loves of my life and my reason for living. Oh yeah and I have a very hard working husband that fits in there too. I love to read. I could do it for hours every day. I consider myself to be a very strong Christian and am very active in our church. My pet peeves are people who refuse to listen or consider another persons point of view. I feel you should respect and be kind to everyone even if their beliefs are the opposite of yours. I do not feel I or anyone else has the right to judge anyone. I don't have to like you or your choices, but I do have to treat you right. My other pet peeve is carpet. yes, I said carpet. I can't stand the feel of it or the sound of people walking or scooting on it. It does to me what a person scraping a chalkboard does to you. For fun, my husband and I are huge nascar fans. If anything to do with it is on then I am watching it. We are a close private family, and are the most content when it is just the 4 or 2 of us.
