- 6 large eggs
- 2 tablespoons butter
- 1⁄2 cup diced onion
- 1 minced garlic clove
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon fresh ground pepper
- 1 cup chopped broccoli
- 10 ounces chopped spinach
- 1 cup monterey jack cheese
- 1 cup extra-sharp cheddar cheese
- 1 prepared pie crust
directions
- Preheat oven to 350°F.
- Steam chopped broccoli until tender and set aside.
- Melt butter in saute pan and add onion and garlic. Add salt and pepper then set aside.
- Beat eggs into a large mixing bowl. Add the onion & garlic mixture, then cheese, broccoli and spinach. Mix well with spoon.
- Pour mixture into a 9 inch pie dish with prepared pie crust and bake in oven for 35 minute
- Notes: Use a toothpick to check the middle of quiche after the set time. If it comes out wet, bake for another 3-5 minute.

Today I woke up to a rainy morning and I was putting my egg recipes in order when I suddenly began to crave quiche. I had some fresh baby spinach (a little over half a 12 oz bag I steamed and squeezed dry, chopped) and broccoli so this recipe fit the bill perfectly. I only had 4 eggs so I added about 3/4 Cup silken Tofu to the eggs mid way thru the mixing to ensure I got enough air in the eggs first. I'm thinking that it will come out nice and add some extra protein to the quiche as well! I also didn't have Monterey Jack so I used shredded Mozzarella. <br/>The Verdict: Fluffy and perfectly tasty quiche that satisfied my craving. Also super stoked it turned out nicely because this was my first attempt at quiche.

I made this yesterday for my nephews to try and incorporate more veggies into their diet without them complaining too much, and it was really good, despite some of the ingredients not being too "kid friendly" at first glance. Everything goes well together, and the kids didn't mind the cheese flavors at all. <br/><br/>I am contemplating adding a protein to this recipe though, I think it could really be a substantial meal by adding just a little something. Perhaps the recipe's author can suggest what meat/protein to include?
