directions

  • Bring 2 1/2 cups water, bullion and bay leaf to a boil. Add 1 cup rice. Bring back to a boil, reduce heat and simmer covered for 30 to 35 minute.
  • You make take 15 minutes to prepare a fresh green salad to accompany the meal (or put your feet up!) The skillet portion will only take 15 minutes and you want it to be ready exactly when the rice is done. * If you begin the skillet when you begin the rice, you will overcook the beans and corn (yuck).
  • Half way through rice cooking time -- Heat skillet/fry pan to medium high, add olive oil.
  • Chop sausage and zucchini bite size and add to hot pan with minced onion. Cook for 3 to 5 minutes until zucchini softens and sausage begins to brown.
  • Add cup of corn (straight from freezer is fine), drain and gently rinse kidney beans and add to skillet.
  • Season with old bay, garlic and paprika. Bring to a simmer for 1 or 2 minutes.
  • Remove from heat when everything is heated through and fragrant.
  • Remove rice from heat. Discard the Bay Leaf.
  • Serve sausage mixture over rice. TASTE before adding any salt as the sausage, old bay and bullion all provide plenty of sodium.*Whatever portions go in the skillet are up to you -- if you only have 3 sausages thats fine, love corn? add more. Try substituting summer squash, other bean types -- etc.

  1. I used this as a launching pad... used breakfast link sausage that was on the spicy side so ended up skipping the Old Bay and garlic. I can't have corn so I sub'd diced green beans. Then I knew that I was pushing hubby's palate so I served it with boiled potatoes that we mashed on the plate with this over the top. It was OK but an unusual meal. I think it will taste good to dice up the leftover potatoes and fry those with some eggs and the leftovers into a scramble.

  2. This was very good. I used ground sausage and served over polenta. I'm a big fan of veggie-loaded dishes, as it's really the only way I can get my kids to eat at least a few. Tasty and filling. Thanks!

Hello I am a photographer and work in the restaurant business... I love to cook and eat all types of meals. Like many, I mostly I cook easy to prepare, healthy, cost efficient meals. And muffins. Lots of muffins. Many of my recipes use dairy alternatives or small amounts of dairy as I am lactose intolerant. My indulgence is indian food. I cook it just for myself because my boyfriend can't stand it! When I am not in the kitchen at work or at home, (or editing 1,000's of photos) I am outdoors getting some exercise in the garden, on the lake, or at Curves! (I love Curves!). I have been known to stay up way too late or get up early just to be creating things in my sewing and craft room. Please try my recipes and let me know what you think!
