This recipe is delicious. The only changes I made (out of necessity) were: I had no green onions,so I had to use a yellow one, finely diced, and had only a 4oz can of mushrooms, which I thought was plenty. Other than that I followed the recipe as written. BTW, I believe a cube of butter is 1 tablespoon. Take one stick of cold butter, and with a sharp knife, cut through it at the tablespoon mark, and walla, a cube of butter, which is slightly more than a "pat" of butter. More can be used, if desired.

Very tasty rice. The consomme gives it a very rich flavor. I did cut the butter to 2 tablespoons, since I took a cube to mean a stick, which is 1/2 cup-way too much butter for us! :)
This was great rice, flavorful and delicious. I prefer fresh mushrooms so used 8oz and sliced them. I used chicken broth for the consomme, added only 1/4 tsp salt, and for the butter used 2 tbsp Smart Balance with Flaxseed Oil Spread, following the rest of the directions and ingredients as stated. I needed 20 mins to absorb all the liquid and the rice was still very moist. The flavors came together really well. Bf said to me "honey that rice was really, really good!" This recipe was very simple to make and very very good , even my husband liked it and he is usualy not a huge fan of my meat and potato's cooking!
