FOR THE SOUP
- 1 sweet onion
- 1 red bell pepper
- 1 kosher salt
- 1 black pepper
- 2 garlic cloves
- 1 tablespoon chili powder
- 2 teaspoons dried oregano
- 2 (15 ounce) cans pumpkin puree
- 2 quarts vegetable broth
- 3 tablespoons lime juice

FOR THE SPICE SHAKE
- 2 tablespoons cumin seeds
- 1⁄4 cup olive oil
- 2 tablespoons fennel seeds
- 2 tablespoons coriander seeds
- 1 cup pepitas
- 2 teaspoons crushed red pepper flakes
- 1 teaspoon kosher salt

SAUTE ONION AND BELL PEPPER:
- Heat ¼ cup of oil in a large saucepan over medium-high heat. Add onion and bell pepper to the saucepan. Season to taste with salt and pepper and cook for 8 to 10 minutes until the onion is soft.

ADD GARLIC, CHILI POWDER AND OREGANO:
- Add 2 chopped cloves of garlic, 1 tablespoon of chili powder and 2 teaspoons of oregano. Cook, while stirring, for about 30 seconds until fragrant.

ADD PUMPKIN PUREE AND BROTH:
- Mix in 2 cans of pumpkin puree and 2 quarts of broth. Cook for 25 - 30 minutes, stirring occasionally until the soup thickens.

PUREE THE SOUP:
- Puree the soup in batches in a blender or using an immersion blender. Taste and adjust seasoning to taste.

MAKE THE SPICE SHAKE:
- In a small pan, over low heat, cook 2 tablespoons each of whole cumin seeds, whole fennel seeds and whole coriander seeds. Once fragrant, transfer to a small bowl. Add 1 cup of toasted pepitas, 2 teaspoons of crushed red pepper and 1 teaspoon of kosher salt.
