Currntly my favorite soup, savory and nourishing.

Directions

  1. Cut up potatoes.
  2. Boil up the vegetable broth and add potatoes, corn, bell pepper, garlic, leek.
  3. Cook for 30 minutes, then puree the soup.
  4. Add sour cream. season with salt and pepper, sprinkle with chili flakes.

Rather than canned corn I used 2 cups of frozen corn (perhaps more than was called for) & seasoned the final dish with lemon pepper rather than the usual S&P! And, I don't know of the potato skins were supposed to be peeled off, but I didn't & just diced them pretty small, skin & all!
