Savory Chorizo Bread Pudding

  • Pre-heat oven to 350°F.
  • Grease 2 9x13 pans.
  • In a medium bowl, toss together 1 1/2 cups cheddar and 1 1/2 cups monterey jack cheese. Set aside.
  • In a large skillet, cook chorizo, stirring occasionally.
  • Add all vegetables and saute until tender.
  • Place bread cubes in very large bowl. Add chorizo mixture and green chilis, toss until coated.
  • Add unmixed cheeses in two additions, tossing well each time. Set aside.
  • In a large bowl (kitchen aid bowl), beat eggs, half-and-half, Tapatio, salt and pepper until well mixed and frothy.
  • Poor over bread/chorizo mix and fold until bread is mostly saturated. Turn into prepared pan. Level surface but do not 'smooth'.
  • Bake at 350F for 50 minutes or until evenly puffed.
  • Spread top with sour cream and sprinkle with mixed cheeses.
  • Return to oven and bake 5 -10 minutes or until cheese is melted. Serve.

I really like to cook, especially if I don't HAVE TO! I try to cook frugally as it is hard to keep 4 big boys and their friends full on a regular sized budget. I used to be a personal chef but gave it up. I couldn't stand cooking wonderful meals for other people and then coming home to give my crew mac-n-cheese and hot dogs :( I also like recipes that are good for use while camping. However, I have lost all of mine so I am rebuilding my file. My pet peeve (regarding cooking) is how people will give you an inacurate recipe so it only comes out good when they make it. Second and like it is the person who won't share recipes. If they don't want you eclipsing them at the church potlucks or in your "foody" circles, they should just request that you don't bring it -- it is their specialty. Anywho, that is some about me.
