This is so good when tomatoes are in season, especially with grilled chicken.
- 4 tomatoes
- 1⁄2 cup fine breadcrumbs
- 1⁄2 cup parmesan cheese
- 2 tablespoons green chives, chopped
- 1 teaspoon dried basil
- 4 teaspoons butter or 4 teaspoons margarine
- salt and pepper
- Cut tomatoes in half and sprinkle with salt and pepper to taste.
- Melt butter.
- Mix dry ingredients.
- Pour melted butter into mix.
- Stir until coated with butter.
- Spoon onto tomatoes.
- Bake at 350 degrees for 15-20 minutes until top is golden brown.
I made these to go along with grilled chicken, tossed salad, roasted garlic potatoes and breadsticks and ended up only eating the tomatoes! They were delicious. I cut them into thick slices instead of halving them. Thanks for the recipe!
This was truly a presentation!!! I had some tomatoes and some mushrooms in bulk and really needed something great to use them in. So, I sliced the mushrooms and they went on top of the tomatoes and I used olive oil rather than margerine. In the end, one picture-worthy dish! Too bad it was paper "plate night" or I would have snapped some pictures. :) Thanks so much!
Went into my cookbook looking for a side dish for supper last night, and this is the one I chose. So glad I did. I was a bit concerned that the tomatoes that I had were still a little on the green side, but it just made them better. We love the "tart" of the green tomatoes, and with this topping, it was a very good combination.
