  • 2 small zucchini, halved lengthwise and cut into half-moons
  • 283.49 g jar roasted red peppers packed in oil
  • 1 lemon, juice of

Directions

  1. Slice the red peppers into strips.
  2. Pour the oil into a skillet and heat over med-high heat.
  3. Add zucchini and sauté until tender, about 4 minutes.
  4. Add lemon juice and red pepper strips and sauté 1-2 more minutes.
