This is a little unusual - fresh strawberries cooked briefly with cinnamon and lime. From my local newspaper. It is excellent on vanilla ice cream, or try in strawberry shortcake, or layer with pound cake and vanilla pudding for trifle desserts.
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 1 tablespoon lime juice
- 1⁄4 teaspoon cinnamon
- 1 pint strawberry, cut in half (or in quarters, depending on size)
- Combine brown sugar, butter, lime juice, and cinnamon in a skillet and cook over medium low heat until bubbling.
- Add strawberries and cook for about 2 more minutes.
Turned these into strawberry shortcake. I thinks these would be good served warm or cold. We served them warm this time, sprinkled with a little bit of powdered sugar. I will make this recipe again, as 3/4 of the family really loved it, and 1/4 ate it with minimal complaints. Thanks for sharing!
Made this as a topping for frozen vanilla yogurt, & now I really have to make another batch (or two or three!) to keep on hand for just about anything ~ Had it over some cottage cheese, too, & that was very enjoyable! Was planning to make strawberries with balsamic vinegar a favorite dessert when I stumbled on this one in the Game Room. Quick easy, refreshing and light, this was a brilliant dessert. I made mine with light butter and brown sugar Splenda as that was all I had but it worked out just fine. Served with dabs of low-fat ricotta it was a guiltless treat. Thanks!
