Sauteed Leeks in Lemon Dill Butter

- 5 medium leeks, white and light green parts only
- 1⁄4 cup butter
- 1 tablespoon lemon juice
- 1⁄4 - 1⁄2 teaspoon sugar
- 1 tablespoon chopped fresh dill, can use half the amount of dried dill
- 1⁄8 teaspoon white pepper
- salt, to taste
directions
- Slice leeks in half lengthwise and soak/rinse well to remove dirt and grit.
- Cut the leeks into 2-inch pieces.
- In a large skillet, melt butter over medium heat. Add the leeks and saute until fork-tender.
- Reduce heat to low and stir in lemon juice, sugar, dill, white pepper and salt. Stir to combine well.
- Serve.

Loved. Made it for my lemon party so I wanted something light as a side and this was perfect. First, I love leeks and use them often, but this was just wonderful. I made the full amount as I had 14 for dinner, but the dishes were tapas sized, so divided up, this was the perfect amount. I used fresh dill, lemon and garnished with a few lemon slices to accent the flavor. I get leeks quite often, so I will definitely make this again. I find leeks and fennel are almost afraid of or intimidated by. They are great vegetables and make a wonderful side dish. Thx so much!!
