Oh wow!! I love spinach, but my husband doesn't usually care for it. He was crazy about it cooked this way! The garlic and the lemon gave a great flavour but what I particlarly liked was the texture! I used spinach (bought in a bag) that had been prewashed and was very dry. I didn't add any water and it was like a cross between fresh and cooked spinach. I can't believe my husband was still talking about how good the spinach was after dinner was over! Thank you Country Lady! Now I can have spinach more often without feeling guilty that I'm subjecting my DH to something he really doesn't like!
I love spinach, but I don't care for it when it's watery so I steamed it, squeezed it dry, then tossed with the sauteed garlic and olive oil, and sprinkled with the lemon juice, salt and pepper. Yum.
Simple, quick and delightful!! I used a mix or spinach and swiss chard, the lemon and garlic certainly complimented the greens, will use this one often, thanks for sharing.
