Here is another way to use green tomatoes. (You know we are known for our Green Fried Tomatoes here in the south!)

  1. Cook pasta according to package directions. Drain and keep warm.
  2. In a large skillet cook garlic in hot oil over medium heat for about 30 seconds.
  3. Add green tomatoes and cook for an additional 3 to 4 minutes, or until heated through, stirring often.
  4. Stir in whipping cream, parsley, and pepper into tomato mixture.
  5. Cook over medium heat for 5 to 8 minutes or until slightly thickened, stirring occasionally.
  6. Remove from heat.
  7. Stir in 1/3 cup parmesan cheese and the ham into sauce.
  8. Serve over pasta.
  9. Top with Parmesan cheese if desired.
