Sauteed Chipotle Chicken

We eat a lot of chicken and often experiment with ways to prepare it. We found some dried chipotle pepper flakes when we were in Arizona and decided to try using it in our sautéed chicken. It was fantastic! If you manage to find the chipotle flakes at your local whole foods or grocery, I recommend you buy them. They add a unique kick to any dish - also great on pizza. This recipe is quite versatile: use whatever chicken you happen to have; just make sure it's enough for 4 or you will need to adjust the ingredients.

This is absolutely fantastic. I used boneless skinless chicken thighs, and it was the most flavorful, tender chicken ever. The gravy was a huge hit with the family. We love spicy food, but if you don't you can use less chipotle. I can't wait to make this again!

Directions

  1. Place everything but chicken broth into a bowl and coat chicken to season.
  2. Sauté the seasoned chicken breasts in a large pan for 5 minutes each side (no need to add oil to pan).
  3. Add chicken broth/stock.
  4. Cover and simmer for 15-20 minutes.
  5. Serve.
  6. You can use the leftover broth in the pan as gravy, just cook it uncovered on high for 5 minutes and drizzle over the chicken and rice (or whatever carb you have).
