Sauteed Chicken Breasts With Grapes and Mint

  1. Preheat large skillet sprayed with cooking spray, over medium heat.
  2. Add chicken and cook for 8-10 minutes or until tender and no longer pink, turning to brown evenly.
  3. Remove from from skillet and keep warm.
  4. Combine apple juice, bouillon granules, cornstarch and mint.
  5. Add to skillet and cook until thickened and bubbly, stirring constantly.
  6. Cook 2 minutes more.
  7. Stir in grapes and heat through.
  8. Serve over chicken.
