I am just now liking Tofu AND Asparagus. I don't know why in all my years that I never would try either of them. So I'm always looking for recipes for both of them. Trying to get my husband to like them too. I made this for dinner last nite and it was Excellent!! I had everything except for the Roma tomatoes so I just opened a can of diced tomatoes and drained off most of the juice. While we were eating husband kept going on at how good this was. Luckily there was just enough leftovers for the both of us today. This is a definate keeper! Thanks so much.

Delicious! I used medium firm tofu and WISH I would have doubled that part because it's so good. Take the time to let it get nice and crisp on the outside edges...it's worth the wait. The only other minor change was that I cooked the tomatoes for longer with the onions and garlic and a pinch of salt, before adding the tofu. I would absolutely make this again and serve for company with a few other dishes and some rice.

Oh my goodness, this was so delicous and so quick and healthy! The spices were perfect and the tomatoes and curried tofu were a perfect complement to the fresh asparagus. I can not wait to make this when local, fresh asparagus comes in season! I made for Spring PAC 2010-thanks for another great recipe!

I wish I'd made a double batch of this! The tofu cubes were perfectly seasoned, with a nice crunchy exterior and tender inside. I used thin asparagus stalks so they would cook quicker to avoid the chance of the onions and garlic getting too dark, and I added both cilantro and parsley at the end of cooking. What a marvelous mixture of flavors -- even my son, who usually doesn't like tofu, said it was great. Another terrific recipe, Chef Edlear!

This had excellent flavor. I skipped the salt and sugar completely. The recipe does not need either and is healthier without. I also skipped the step of boiling the tofu. This is the first recipe I have ever seen that recommends boiling and it seems unnecessary. Tofu handles and tastes best when sauteed or stir fried. With these simple changes, the taste was excellent and I will definitely make it again.

The tofu here was great! I skipped the boiling part because I was short on time but it still turned out great. I also halved the tomatoes. Will make again!
