Sausage Casserole


  1. Cut the sausages in half. Heat 1 tbsp oil in a large saucepan and fry the sausages slowly, until browned. Remove and set aside. Add another tablespoon of oil and fry the onion and garlic until soft but not brown. Replace the sausages and add the chopped tomatoes, tomato puree, herbs and sugar, and stir.
  2. Mix the cornflour with a tablespoon of stock in a bowl then stir in the remainder of the stock and mix well. Add to the casserole, stir and season well. Bring to the boil, cover, and simmer for 35-40 minutes, adding more boiling water if required during cooking. Add the peas 5 minutes before the end of the cooking time.
