- Over medium-high heat, fry sausage and onions together in a deep skillet until lightly browned. Drain fat.
- Stir in potatoes, water, salt and pepper. Cover and simmer 10 minutes.
- Mix in asparagus and simmer an additional 10 minutes or until potatoes are tender. Add extra water if needed.
- Sprinkle cheese on top before serving.

This was very good. I used Bulk Italian Sausage, Yukon Gold potatoes in about a 3/4" dice, and added the diced yellow peppers. We really liked it. It tastes like a comfort food. I used my CSA asparagus. I don't think it was a pound--we like a lot of veggies--it would have been better with a pound. Don't skimp on the asparagus! I topped it with grated Parmesan. Tasty!
