Sausage and Veggie Skillet Supper

- 226.79 g low-fat kielbasa (sliced into coins)
- 14.79 ml extra virgin olive oil
- 2 medium onions
- 2 medium zucchini
- 1 large red bell pepper
- 113.39 g green chilies (diced)
- 2 garlic cloves
- 2.46 ml ground cumin
- 2.46 ml dried oregano
- 2.46 ml salt
- 473.18 ml cooked brown rice
- 425.24 g can pinto beans
- 118.29 ml water
- hot sauce
directions
- Cook kielbasa in a large nonstick skillet over high heat, turning from time to time, until lightly browned, about 2 minutes. Transfer to a plate.
- Add oil to the pan. Add onions, zucchini, bell pepper, chillies, garlic, cumin, oregano and salt; cook, stirring, until the onions are tender, 4 to 5 minutes. Stir in rice, beans and water; cook, stirring, until heated through, about 4 minutes. Add the reserved kielbasa and season with hot sauce. Serve hot.

This was super easy to put together and quite delicious! I cut the onions and bell peppers into strips and the zucchini into rounds and added them all to a bowl with the remaining ingredients up to the rice. Once the kielbasa was done cooking I dumped the whole bowl into my large skillet and let it cook. I tossed in the brown rice and pinto beans and did not use the 1/2 cup water or hot sauce. <p>First, I'd like thank everyone who reviews my recipes. I can't thank each of you personally although I try. <br /><br />I Live in central Virginia, 5 miles from where I grew up, w/ my Husband of 17 years and my beautiful daughter. She is 10 and is the joy of my life. We waited for a long time to be blessed with a child and it is the best thing I've ever done. Be a mother. <br /><br />I love to cook. We eat very healthy, after a life altering experience at 31 I've been on a journey to be healthy and lose weight. I've lost 50 lbs and have kept most all of it off for the last 9 years. There are always fluxs, durring stressful times, but I've mananged to keep most of the weight off. My best advice to anyone trying to lose weight is to remember that it didn't get there overnight and it won't come off overnight. I've never said I was on a diet. It is a lifestyle.</p>
<p>When Zaar first changed to Food I took a short hiatus. I was going thru a very hard time in life and was completely unmotivated to do anything and thus gave up my hosting duties on Holiday Tag. But now with a new perspective I'm hoping to get back to cooking and tagging.</p>
