Modified from a recipe I found on AllRecipes.com - removed the potatoes to make it more Atkins compliant, changed the sausage to turkey kielbasa for low-fat.

This recipe is really more about the method than an exciting new flavor experience...but that being said it nails that yummy sweet/sour/astringent flavor experience that you would want from a sausage dish. I halved the recipe, and since my crock pot is huge I was afraid of burning it so I put the layers in an 8 x 8 pan and baked, covered, until the onions and apples were tender. I did add a pinch of dill; just seemed like the thing to do. I also skipped the cheese and served with noodles since DH and I aren't low carb-ers. Next time I will add more caraway, just based on personal preference. Thanks for posting; I will definitely make this again and will try the full recipe in the crock pot next time. - 2 lbs turkey kielbasa, cut into 1 inch pieces
- 1 1⁄2 lbs sauerkraut, drained and rinsed
- 2 granny smith apples, peeled, cored and sliced into rings
- 1 medium onion, sliced into rings
- 1 cup low-sodium low-fat chicken broth
- 1⁄2 teaspoon caraway seed (optional)
- 1⁄2 cup shredded low-fat swiss cheese

- Place half the sauerkraut in a slow cooker, and top with the sausage. Cover with the remaining sauerkraut, apples, and onion. Pour chicken broth over all, and sprinkle with caraway seeds.
- Cover, and cook on high 3-4 hours or low 6-8 hours.
- Place each serving in a broiler-safe individual bowl or casserole, sprinkle with Swiss cheese and place under broiler for 1-2 minutes until cheese turns bubbly and brown.
