This is a recipe sitting in one of our family's recipe boxes. The name on the top is Jessie Penner. I've never met this lady, but she does make a wonderful sauerkraut cake!

  1. Blend the butter and sugar together in a large bowl.
  2. Add the eggs and mix again.
  3. Sift the dry ingredients together, then add the water alternately with the sifted, dry ingredients to the butter and sugar mixture.
  4. Stir in the sauerkraut and vanilla.
  5. Put in two 8 x 8 inch pans and bake at 350 F for 30 minutes.

This is very similar to a recipe that I used to make. You really can't taste the sauerkraut, which looks like cocoanut bits in the cake. My recipe uses 2-1/2 cups flour and only 1/4 tsp salt, and says that you can use either coffee or water. It is finished with a whipped cream mocha topping.
