  1. in large bowl, beat eggs and sugars.set aside.
  2. squeeze sauerkraut after rinsing till dry.
  3. finely chop and add to egg mixture -- add oil and walnuts --
  4. combine flour, baking powder, baking soda and salt and nutmeg.
  5. stir into egg mixture.
  6. line bottom of 2 8" round cake pans with waxed paper.
  7. grease and flour paper.
  8. pour batter into pans --
  9. bake at 350* for 35-40 minutes or toothpick test.
  10. cool in pans for 10 minutes.then remove and place on racks to cook completely.
  11. FROSTING:.
  12. beat cream cheese and 2 tbls cream in small bowl --
  13. add sugar, beat till fluffy --
  14. add orange peel.cinnamon and vanilla.mix well.
  15. add remaining cream if needed --
  16. spread between layers and cover entire cake.
  17. garnish with walnuts if desired --
  18. store leftovers in the refrigerator.
