Saucy Spinach Curry

- oil (for frying)
- 3 cups chopped spinach
- 1 cup chopped basil
- 1 (400 ml) can chopped tomatoes
- 2 tablespoons fermented black beans
- 3 tablespoons peanut butter
- 1 crushed garlic clove
- 1⁄2 teaspoon curry masala
- 1⁄4 teaspoon garam masala
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon ground cinnamon
- 1⁄4 teaspoon ground coriander
directions
- heat oil.
- add spices and toast lightly.
- stir in spinach, basil and garlic.
- stir fry cook on moderate heat.
- add tomato, peanut butter and fermented black beans.
- let simmer for 15 minutes on low heat.
- stirring occasionally to prevent sticking.
- serve on a bed of brown organic rice.
