An easy Bechamel.
- 1 tablespoon butter, unsalted and clarified (generous)
- 1⁄2 tablespoon flour
- 1 cup table cream
- 2 tablespoons swiss cheese, grated
- Combine butter and flour in a heavy saucepan.
- Slowly stir in salt, pepper and cream, until blended.
- Add cheese and stir to combine well.
- Heat over medium-low heat, stirring constantly, until cheese is melted.
