    Directions:

      Preheat oven to 350°F; spray a loaf pan with cooking spray.
    2. 2
      In a large bowl, combine beef, salsa, oatmeal, carrot, tomatoes, and mushrooms. Shape the mixture into a loaf.

      Place the loaf in the pan. Bake until browned and knife inserted in center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.

      I've never been big on meatloaf but I really like this one. My son doesn't like eating his veggies, but he LOVES this recipe. I use 3/4 cup chopped mushrooms instead of 1/2 cup. Sometimes I add shredded zucchini to sneak in a few more veggies. The extra mushrooms makes it less messy when I slice it into servings. I also recommend letting the meatloaf sit for a few minutes after removing it from the oven -that also helps make it easier to serve.

      We really liked this. Lot's of flavor and very easy! I used 1 1/2 lbs lean hamburger but decided to just use 1 cup of salsa (seemed like more would just fall apart) and 1 cup of oatmeal. I bought a can of whole tomatoes and used 3 of them, diced. This was very flavorful. We served it with Heinz Chili Sauce on top. Perfect! I made the WW Mashed Potatoes (uses cauliflower) listed on this site. Thanks!

      The flavor is very good but no way could you slice this meatloaf. It needs egg white or eggbeaters to make it stay together. Chef 846797
