Saskatoon Berry Muffins

This is a recipe I received from my neighbour who sells saskatoons.
Directions:

Soak rolled oats in orange juice.

Stir the dry ingredients together. Make a well in the centre of the dry ingredients.

Pour in the rolled oats mixture and the saskatoon berries.

Fold together being careful not to overmix.

Spoon the mixture into 12 large muffin cups. Mix the last measurement of sugar and the cinnamon together and spoon on top.

Bake at 375F for 18 to 20 minutes.

Wow! A wonderful recipe! Very flavourful and surprisingly 'fluffy' and light tasting. I did add 2-3 extra tbsp. of orange juice as the batter was very dry. I will make this one over and over again.

Extremely flavorful recipe! I used whole wheat flour and found the batter a bit dry and it did not rise much, but the fabulous flavor more than made up for it. I will add more juice next time. Do not pass this recipe by!!!
