Sarah's Tamale Pie With Cornbread Crust

This came from Sarah's x-mother in law. This is a great pie.

  1. Fry hamburger and onion together in skillet, breaking the meat up into small pieces.
  2. When the meat is brown, remove as much fat as possible.
  3. Add the remaining ingredients, mix well and simmer 5 minute
  4. Turn mixture into baking dish or leave in skillet. Cover with cornbread crust and bake for 20 min at 400 degrees.
  5. Crust - Mix and sift dry ingredients. Combine egg, oil and buttermilk. Add to dry ingredients, stirring just until well mixed. Spread batter evenly over hot meat mixture and bake.

Well, my DH's usual comment on most new dishes is, "Yeah, it's not too bad." This time, it was, "This was really good!" Need I say more? Left out the olives and used homemade tomato soup and fresh corn. Loved the crust and may try it by itself. I used an iron skillet from start to finish.

I make this recipe, also, except I omit the olives--I like them but hubby doesn't. I don't remember where I got the recipe; I've had it for years! It is one of my husband's favorites. The cornbread crust is wonderful.
