- 2 cups cooked rice, cooled
- 1 (16 ounce) can black beans, rinsed and drained
- 1 (17 ounce) can whole kernel corn, drained
- 1⁄4 cup onion, minced
- 1⁄4 cup white vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons cilantro or 2 tablespoons parsley, chopped
- 2 jalapeno peppers, minced
- 2 teaspoons chili powder
- 1 teaspoon salt
- cilantro (to garnish)
directions
- Combine rice, beans, corn, and onion in medium bowl. Combine vinegar, oil, cilantro, peppers, chili powder, and salt in small jar with lid. Pour over rice mixture; toss lightly. Cover and chill 2 to 3 hours to blend flavors. Stir before serving. Garnish with cilantro, if desired.
