Santa Fe Chicken
- 1 lb boneless chicken breast
- 2 tablespoons butter, melted
- 1 tablespoon Tex-Mex seasoning
- 1 teaspoon lemon juice
- Place chicken in baking dish.
- Mix melted butter, Tex-Mex seasoning, and lemon juice; brush on both sides of chicken.
- Bake 20 minutes at 400 degrees Fahrenheit or until done.
- Serve with Spanish rice.
