Sandy is a friend of our family and a wonderful old-style cook. I raved about her bread and she gave me her recipe! Hers still turns out better than mine for some reason!

  1. Beat eggs.
  2. Add oil, sugar and vanilla.
  3. Beat until thick and foamy.
  4. Stir in zucchini.
  5. Mix dry ingredients.
  6. Gently stir into zucchini mixture and mix until just blended.
  7. Fill two greased loaf pans and bake at 350 for 60 minute.

I tried this recipie last night for the first time. I didn;t think it was bad, but it wasn't my favorite either. The bread was very dense, and nutty. I liked the nutty part, but the density was a problem for me personally. My DH is chomping away as I write. :-)
I made a few changes after reading the cooks comments - add 1/4 tsp salt and squeezed the moisture out of the zucchini before adding. The only other problem was that the ingredients were "out of order", and I almost missed the brown sugar addition and the vanilla additions to the wet mixture.
