Sandy’s Zucchini Bread

1 loaf
ingredients
- 3 eggs
- 1 cup sugar
- 2 cups zucchini
- 1⁄2 cup wheat germ
- 2 teaspoons baking soda
- 1 cup nuts
- 1 cup oil
- 3 teaspoons vanilla
- 1 cup brown sugar
- 2 1⁄2 cups flour
- 1⁄3 cup roasted sesame seeds
directions
- Beat eggs.
- Add oil, sugar and vanilla.
- Beat until thick and foamy.
- Stir in zucchini.
- Mix dry ingredients.
- Gently stir into zucchini mixture and mix until just blended.
- Fill two greased loaf pans and bake at 350 for 60 minute.

I tried this recipie last night for the first time. I didn;t think it was bad, but it wasn't my favorite either. The bread was very dense, and nutty. I liked the nutty part, but the density was a problem for me personally. My DH is chomping away as I write. :-) <br/>I made a few changes after reading the cooks comments - add 1/4 tsp salt and squeezed the moisture out of the zucchini before adding. The only other problem was that the ingredients were "out of order", and I almost missed the brown sugar addition and the vanilla additions to the wet mixture.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN! I have a small (but growing quickly!!) cookbook collection and one of my favorite things to do is to read recipes and plan meals. Rachael Ray, Horn of the Moon and Moosewood are favorites of mine. <br /><br />We spend a lot of time outdoors camping, hiking and backpacking. Yup. I cook in the woods too!
