Remember to use the Sandra's Jam Cake Icing recipe that is provided on This was given to me by my good friend Sandra McKay on Christmas of 2015.

Ingredients Nutrition


  1. In large mixing bowl cream butter well add sugar slowly until fluffy.
  2. Add well beaten eggs to mixing bowl with sugar and butter mixture.
  3. Mix in a separate bowl flour, salt, spices and baking soda alternate mixing this into egg mixture with buttermilk.
  4. Coat the raisins and walnuts well with flour before folding them into the batter mixture. Add in Jam and mix well.
  5. Pour batter into pan or pans and bake at 325 degrees for one hour or until center springs back.
