These sandwiches-of-bagels (hence the name "sandbags") are a quick, easy, and satisfying meal for busy nights. Meat eaters may enjoy a slice of ham tucked inside. Tasty served with sliced Honeycrisp apples or red grapes.
- Fry each egg to desired hardness (I like mine over hard).
- While eggs are cooking, toast the bagels.
- After the bagels are toasted, spread one half with a generous layer of cream cheese.
- Layer the egg, cheddar cheese, onion, tomato, cucumber, and lettuce on top of the cheddar cheese.
- Serve warm.
