I made this for my boyfriend and room mates one night, and they loved it. It was great, and doesn't have raisins like most carrot cakes. I'm not a fan of raisins, so this was perfect for me.

  1. Preheat oven to 325 degrees. Butter a 10" tube or bundt pan.
  2. Blend oil and sugar. Add eggs, beating well after each addition.
  3. Sift together flour, salt, cinnamon, and baking soda. Add to egg mixture. Stir completely.
  4. Fold in carrots and walnuts.
  5. Pour into pan and bake about 1 hour and 15 minutes. Cool, then remove by inverting pan.
